Delicious PB Caramels
A must-have caramel treat to share with friends.
Ingredients: 1 cup light corn syrup 1 cup sugar cup heavy cream cup Adam s peanut butter (chunky preferred over creamy) butter
Directions: 1. Cover a loaf pan (9-by-5-by-3-inch pan is a good size) with foil. Butter the foil. Combine corn syrup and sugar in a saucepan. 2. Bring to a boil. Be sure to stir constantly. Cook uncovered on medium heat, stirring frequently, until it reaches 245 F on a candy thermometer or until syrup forms a ball when dropped in cold water. 3. Slowly stir in peanut butter and heavy cream. Keep the mixture at a constant boil. 4. Cook over medium heat while stirring mixture constantly. 5. Once it reaches 245 F, remove from heat and pour into prepared loaf pan. 6. Once cooled, pull it out of loaf pan. Remove foil. Cut into pieces. Wrap each piece in waxed paper. Refrigerate.
