Chilling Peanut Butter Cheesecake
A chilling peanut butter cheesecake
Ingredients: 1-1/2 cups graham cracker crumbs 1/4 cup peanut butter (Arrowhead Mills opt) 2 (8 oz) pkgs softened cream cheese 1 tsp vanilla 1/2 cup chopped peanuts 1/2 cup chilled whipping cream 3 T sugar or (sucanat opt) 3 T butter 3/4 cup sugar or (sucanat opt) 2 eggs 1/2 tsp vanilla
Directions: Preheat oven 350 degrees.
In saucepan over low heat add: Peanut butter, 3 T sucanat or sugar, and butter. Stir until butter is melted. Stir in graham cracker crumbs. Press mixture in bottom ungreased square pan 9 x 9.
In mixing bowl beat: Cream cheese, 3/4 cup sucanat or sugar, vanilla, eggs. Beat on medium speed till smooth aprox. 2 minutes. Fold in peanuts and pour over crumb crust. Bake 30 minutes or until firm. Cover and refrigerate 2 hours.
In chilled mixing bowl beat: Whipping cream and 1 tsp vanilla until stiff. Spread on top of chilled cheesecake.
