Chewy Peanut Butter Cookies
A great lunchtime treat!
Ingredients: 1/2 cup creamy peanut butter 1/2 cup butter, softened 1/2 cup granulated sugar 1/2 cup firmly-packed brown sugar 1 large egg 1 teaspoon vanilla extract 1 3/4 cups flour 3/4 teaspoon baking soda 1/2 teaspoon salt
Directions: 1. Preheat oven to 375 F 2. In a large mixing bowl, combine butter, peanut butter, granulated sugar, brown sugar, vanilla and egg. Then Beat using electric beater until it forms a light and fluffy consistency. 3. In separate bowl, mix flour, baking soda and salt, mix thoroughly then stir into peanut butter mixture until well blended. 4. Using a large spoon shape dough into about 1 inch balls. Place separately (three inches apart) unto ungreased cookie sheet. Softly press down on balls, slightly flattening them. (Using a fork to press down with will give them a nice criss cross pattern.) 5. Bake in oven for eight to ten minutes, or until lightly browned. (Serves around twenty four) Enjoy
